Puppy Chow Cookies

So if you are like me and you're obsessed with Puppy Chow, then you will love this in cookie form. They were fabulous but go so so quickly! Especially living in a house with 11 others, something good and tasty doesn't last long!


Here is the main stuff you will need, all purchased at Walmart! 

Preheat to 375 for conventional oven
Makes about 25-30 cookies

1 pouch of the Betty Crocker Peanut Butter Cookie Mix, or any peanut butter mix that is your favorite. 
3 Tablespoons Veggie Oil
2 Tablespoons Water
1 Egg
(3, 2, 1 !)

For the coating you will need:

1 cup of Semi- Sweet Chocolate Chips
1/4 cup Butter
1/4 Cup Peanut Butter
1 Teaspoon Vanilla
1 1/2 Cups of Powdered Sugar

Mix all of the cookie ingredients so it's a thick mixture
Line up the dough in 1 inch circles and bake for 8-9 minutes. (We have an industrial oven so mine cooked in about 3 minutes) 
Boom cookies! Now I stuck those bad boys in the freezer on the trays for about an hour. 
Meanwhile, In small microwaveable bowl, microwave chocolate chips, butter and peanut butter uncovered on High 1 minute to 1 minute 30 seconds; stir until smooth. Stir in vanilla.
Doesn't this look just yummy?
Once those cookies are pretty hard, cool and don't seem like they will break, put the powdered sugar in a plastic re-sealable bag. Place cookies in large bowl and put a few cookies in there, pour 1/3 of chocolate mixture over cookies and gently turn with a rubber spatula. Be careful! A few of mine broke and crumbled. Take those cookies and put them in the bag with sugar. Repeat until you have covered all the rest of the cookies with the chocolate. (See it's just like making real puppy chow!) Once all the cookies are in the bag with the sugar, gently coat all the cookies with the sugar in the bag. Once all the cookies are coated, take them out, put them on a tray or plate, and await for them to be attacked. Like I said, they won't last long!

Rigatoni Cheese Bake

So for today's recipe, I made a Rigatoni Cheese Bake. It sounds simple to make because it is super simple. All the ingredients used in today's recipe you can get at Trader Joe's, which is where I went, or you can easily get them at any grocery store. What will I need, you might ask? Here are the materials:


1 pound Rigatoni Pasta
7 Slices of Mozzarella Cheese
2 18 oz Jars of Tomato or Marinara Sauce
2 cups of Pre-Cooked Chicken Breast, cut up
1 tablespoon Extra Virgin Olive Oil

1. Preheat the oven to 350 Degrees F. Bring a large pot of water to a boil, and cook the pasta. While the pasta is cooking, cut the chicken up into small, spreadable pieces. 

2. Coat a 9 x 13 pan with a tablespoon of Extra Virgin Olive Oil and spread it around the pan. Then pour one of the jars of Marinara sauce onto the oil. 


3. Once the pasta is cooked, drain the pasta, and pour the pasta over the sauce in the pan. Be careful, the pasta will be hot!



4. Now take the chicken you have cut up, and spread that over the noodles. 

5. Now pour the second jar of on top of the chicken and noodles.

6. Top the chicken, sauce, and noodles with the slices of mozzarella cheese, and cover with foil. Be careful that the foil doesn't touch the cheese otherwise the two will become best friends and stick together!

7. Now bake that for 15 minutes covered, take it out, take off the foil, and cook it for another 10 uncovered. And bam, you have delicious, cheesy, saucy, pasta!

Nutella Swirl Brownies


For my first recipe, I thought I would start off with something super simple, Nutella Brownies. So to start, preheat the oven to 350 degrees F. 



What You'll Need: 
A family size box of Pilsbury Chocolate Fudge Brownie Mix (I like them fudgey rather than cakey)
1/2 cup of oil
1/4 cup of water
2 Large eggs
About a 1/2 cup of Nutella 
Cooking spray


While the oven is heating up, mix together brownie mix, oil, water, and two eggs in a large mixing bowl with a whisk. Once everything is blended up and there are no lumps left, set aside. Now spray two large muffin tins with the cooking spray. Spoon 1 1/2 tablespoons of brownie batter into each tin. I was able to get about 19 out of the mix. 



Once you've done that, now it's time for the Nutella. Now if you are like me, licking the brownie batter spoon is inevitable, so grab a clean spoon for the Nutella. Spoon a 1/2 teaspoon into each brownie cup, and once you have done that, take a knife and swirl each brownie cup a few times. Put those bad boys in the oven for 28 minutes or until mostly cooked through with the toothpick test. Allow to cool and take them out of the tins once cool and enjoy :) So simple, yet so addicting, it will be very hard not wait to eat them, especially while warm.
